Картошка с Грибами — Potatoes with Mushrooms
There is nothing fancy about жареная картошка с грибами, and that is entirely the point. Pan-fried
potatoes with mushrooms and onions is honest, satisfying fasting food that has fed families across
Russia for generations. Golden, crispy, earthy, and ready in 30 minutes.
FASTING LEVEL: Fast With Oil (this dish requires oil for frying — for strict oil-free days, bake the potatoes and mushrooms instead at 200C for 35-40 minutes, tossing with a little water and salt)

INGREDIENTS:
- 800 g waxy potatoes, peeled and sliced into thin half-rounds
- 400 g fresh mushrooms (cremini or white button), sliced
- 2 medium onions, sliced into half-moons
- 4 tablespoons sunflower oil
- 4 cloves garlic, minced
- Salt and black pepper to taste
- Fresh dill and parsley, chopped, for serving
METHOD:
1. Heat 2 tablespoons of oil in a large, heavy skillet (cast iron is ideal) over medium-high heat. Add potatoes in a single layer — work in batches if needed. Cook without stirring for 4-5 minutes until the bottom is golden, then flip and continue until potatoes are golden and cooked through, about 12-15 minutes total. Remove to a plate.
2. In the same skillet, add remaining oil. Cook onions for 5 minutes until softened.
3. Add mushrooms and a pinch of salt. Cook over high heat for 6-8 minutes until mushrooms are deeply browned and all liquid has evaporated.
4. Return potatoes to the skillet. Add garlic, salt, and pepper. Toss gently for 1 minute.
5. Serve immediately, heaped with fresh dill and parsley.
NOTES:
- The key is not to crowd the pan and not to stir too often. Patience gives you the golden crust.
- For added protein, serve alongside a bowl of canned or home-cooked beans dressed with garlic, dill, and sunflower oil.
- Some cooks add the mushrooms and onions to the potatoes from the start, but cooking them separately and combining at the end gives better texture.
