Russian Fast Without Oil

Кутья is among the most ancient dishes in Slavic Orthodox tradition, served on Christmas Eve
(Сочельник), at memorial meals, and at the start of Great Lent. Whole wheat berries dressed with
honey, poppy seeds, and walnuts — it is at once a ritual food and a genuinely delicious dish.

FASTING LEVEL: Strict Fast (no oil) — this dish is naturally oil-free

TIME: 1 hour 30 minutes (plus optional soaking)

INGREDIENTS:
- 300 g whole wheat berries (not cracked wheat, not bulgur — whole grains)
- 100 g poppy seeds
- 100 g walnuts, roughly chopped
- 80 g honey (or to taste)
- 80 ml warm water (to dissolve honey)
- 50 g raisins
- 50 g dried apricots, chopped (optional)
- Pinch of salt

METHOD:
1. Soak wheat berries in cold water overnight, or for at least 4 hours. Drain.
2. Place wheat berries in a pot with fresh water (cover by 5 cm) and a pinch of salt. Bring to a boil, reduce heat, and simmer for 60-90 minutes until grains are tender but still chewy. Drain and let cool.
3. While wheat cooks, prepare the poppy seeds: pour boiling water over them and let soak for 30 minutes. Drain well, then grind in a mortar and pestle, spice grinder, or food processor until the seeds release their white milk and form a paste. This step is essential.
4. Soak raisins and dried apricots in warm water for 15 minutes, then drain.
5. Dissolve honey in warm water.
6. Combine cooled wheat berries with ground poppy seeds, walnuts, raisins, dried apricots, and honey water. Mix gently.
7. Let stand for at least 30 minutes before serving to allow the flavours to meld. Serve at room temperature.

NOTES:
- Кутья is deeply symbolic: wheat represents resurrection, honey represents the sweetness of the Kingdom, poppy seeds represent rest.
- The poppy seeds must be ground — whole poppy seeds just slide off the grain and the dish will taste flat.
- Wheat berries vary widely in cooking time. Start checking at 45 minutes. They should be tender but not mushy.
- This is naturally high in protein from the wheat, nuts, and poppy seeds.
