Smoky White Bean and Kale Skillet with Garlic Breadcrumbs

Beans and greens is one of the oldest fasting meals there is, and it survives because it works. What lifts this version out of the ordinary is the breadcrumb topping — stale bread fried in olive oil with garlic until it shatters. It goes on at the last second and gives the whole skillet the crunch that beans always want.

Smoked paprika does the work that bacon does in other kitchens. Use the real Spanish kind, pimentón de la Vera, and use more than feels reasonable. Two teaspoons across a skillet is right.

Cannellini or butter beans, kale, garlic, and bread — four cheap things that make a supper. Serve with more bread, because the pot liquor is the best part.

INGREDIENTS

For the breadcrumbs:
- 3 slices stale country bread, torn into crumbs (about 1.5 cups)
- 3 tablespoons olive oil
- 3 garlic cloves, thinly sliced
- Pinch of salt

For the skillet:
- 3 tablespoons olive oil
- 1 onion, sliced
- 5 garlic cloves, minced
- 2 teaspoons smoked paprika (pimentón de la Vera)
- 1/2 teaspoon red pepper flakes
- 2 tablespoons tomato paste
- 2 x 400g cans cannellini or butter beans, undrained
- 1 cup (240ml) vegetable broth
- 1 large bunch (250g) kale, stemmed and roughly chopped
- 1 tablespoon red wine vinegar
- Salt and black pepper

METHOD

1. Make the breadcrumbs first. Heat the oil in a wide skillet over medium heat, add the sliced garlic, and cook until pale gold. Add the torn bread and a pinch of salt and fry, tossing often, 5-7 minutes until crisp and browned. Tip onto a plate and wipe the pan.

2. In the same skillet, heat the remaining oil over medium. Add the onion and cook 6-8 minutes until soft and beginning to color.

3. Add the minced garlic, smoked paprika, and pepper flakes. Cook 45 seconds — paprika burns fast and turns bitter, so keep it moving.

4. Stir in the tomato paste and cook 2 minutes until it darkens to brick red.

5. Add the beans with their liquid and the broth. Bring to a simmer and cook 8 minutes, mashing about a quarter of the beans against the side of the pan to thicken the sauce.

6. Add the kale in handfuls, pushing it under the liquid. Simmer 5-6 minutes until tender but still dark green.

7. Off the heat, stir in the vinegar and season with salt and plenty of black pepper. Scatter the garlic breadcrumbs over the top and serve immediately, before they soften.

NOTES

- For strict no-oil days: skip the breadcrumbs, sweat the onion in broth, and toast the paprika directly in the tomato paste with a splash of water. Finish with extra vinegar.
- Chard, collards, or spinach all substitute for kale. Spinach needs only a minute.
- Do not drain the beans — that starchy liquid is what makes the sauce.
- A can of chickpeas alongside the white beans adds texture and pushes protein higher.
